Browned Butter Sesame Financier

I realize that all the recipes I’ve uploaded so far involve sesame, and maybe I’ll use a different flavor in the future, but for now, here is another one.

Financiers are similar to madeleine’s but don’t require a fancy pan.

Browned Butter Sesame Financier
yields 8 regular muffin sized servings


what you need

for the financier
  • 100g almond meal
  • 40g black sesame seeds
  • 45g all purpose flour
  • 140g sugar
  • 1 tsp salt
  • 4 egg whites
  • 80g butter

  • chocolate ganache for a molten middle

what you need to do

  1. Preheat your oven to 375 deg F.
  2. Toast your black sesame seeds in a pan on medium heat for 3-4 minutes, and then blend your toasted seeds to create a sesame flour. I use a spice grinder for this.
  3. Place your butter in a small saucepan on medium heat. Allow your butter to melt and brown, while continuously swirling your saucepan or stirring to prevent the butter from burning. When the melted butter and the milk solids turn brown, remove the mixture from the heat. This process should take around 3-5 minutes, and you will know it is ready when the butter begins to smell sweet/nutty/caramel-y/heavenly. I ended up with around 65g of browned butter.
  4. Combine your dry ingredients.
    almond meal + step 1 sesame flour + all purpose flour + sugar + salt
  5. Stir in the egg whites.

  6. Stir in the browned butter (cooled slightly).

  7. Butter or spray your muffin tin, and then fill almost to the brim with the financier batter. If you want a chocolate ganache center, fill each tin halfway, add a scoop of chocolate ganache, and then fill the batter the rest of the way.
  8. Bake for 17-20 minutes, or until the edges are golden brown.
