Ube Coconut Mochi Muffin

This recipe was actually improvised. I wanted to make mochi muffins but realized I was missing some of the ingredients (aka eggs). Decided to run with what I had and ended up with this! If easy and yummy is not enough, it’s also unintentionally vegan and gluten free.
Was also not expecting it to turn out this purple – baking with fresh ube often dilutes the color.
Ube Coconut Mochi Muffin
makes 12 muffins
what you need
- 250 g glutinous rice flour
- 150 g sugar
- 1 can or 400 mL coconut cream
- 150 g baked ube
- 25 g water
- 1 tsp baking powder
- pinch of salt
what you need to do
- Preheat your oven to 350 deg F.
- Combine the ube with the water, and puree/mash this until smooth (I used a fork to do this).

- Combine all of the ingredients.
mashed ube + coconut cream + sugar + rice flour + baking powder + salt
- Pour the batter into a greased muffin tin.
- Bake for 45 minutes.
